Serves: 11/2 cups
  • 5 cups dried, shredded coconut, unsweetened
  • optional spices (cinnamon, nutmeg, cocoa powder, lemon zest)
  1. Add coconut to a food processor and process until smooth. Using a spatula, scrape down the bowl as necessary to ensure even blending. If you'd like to flavor the butter, add half a teaspoon of your favorite spices.
