Microwave Lime or Lemon Curd
  • 1 c. sugar
  • 3 eggs
  • 1 c. fresh lime juice
  • zest of 4 limes
  • ½ c. melted unsalted butter
  1. In a microwave safe bowl whisk together sugar and eggs. Add the rest, and pop into the microwave.
  2. Heat in 1 minute intervals, stirring between each, until the mixture coats the back of a metal spoon. Cool and store in the refrigerator.
