Chocolate Energy Balls

Serves: 2 dozen balls
- 1 cup pitted dates
- 1 cup cashews (or nuts of choice)
- ¼ cup cocoa powder plus extra for rolling
- 1 tablespoon coconut oil, melted
- ⅓ cup chocolate chips
- Combine all ingredients in a food processor and whiz until they form a thick paste.
- Using a cookie scoop or tablespoon, roll dough into balls and roll the balls in cocoa powder.
- Refrigerate in a hermetic container up to 5 days.
