Hi friends! This week my family flew stateside to visit my relatives for the first time in two years. They’re snuggling the little ones and trying to shove all the sugar they can into my little girl while Husband and I take evening bike rides and enjoy the local ice cream parlours. That’s a recipe for summer bliss but not so much for coming up with new posts for you.
That’s why I’m so glad my friend Carrie from The Frugal Foodie Mama stepped up to the plate and has a fantastic summer treat for you today. I’m all kinds of crazy for Almond Joy bars, and making them into a green smoothie… See, this gal’s a genius!Hello all! But first let me say hello and tell you a little about myself and my blog…

Now let’s talk about this Almond Joy Green Smoothie, shall we? 😉 It is no secret to my regular readers and followers that I have a crazy mad sweet tooth. Sweets are my #1 downfall to not always eating as healthy as I would like to. While I will never completely give them up (moderation not deprivation is my motto!), I do like to create a few lower calorie and lower fat versions of some of my dessert favorites. My fave way to do this? With simple & creamy green smoothies!

I am pretty happy to report to you all that my Almond Joy Green Smoothie comes pretty close to the real deal. 😉 Perfect for when you need a sweet treat without overindulging…
- ⅔ cup nonfat plain regular or Greek yogurt
- 1 large handful of fresh spinach leaves
- ¼ cup shredded coconut
- 1 tbsp cocoa powder
- ½ cup coconut milk
- 1-2 drops of almond extract
- Your favorite sweetener, if needed (I added 1½ tsp sugar to mine.)
- Add all all ingredients to your blender and blend until smooth. Pop a straw in your blender cup or pour into a glass and enjoy!
- Garnish with a little shredded coconut, if desired. Enjoy!
