This weekend Husband and I went to visit Grandparents who had just flown back from visiting Mother-in-Law, who sent me a cookbook. Woo-hoo! Now I officially have 2 “real” cookbooks in my possession. The other one is just an insert from a newspaper, but nonetheless an excellent resource.
I had an order for alfajores this week, so I used the new Eagle Brand Simple 1-2-3 cookbook for the cookies. I like these much better than the last alfajore cookies I posted. They have much more flavour due to the leche condensada. They’re also soft and not as crispy as a typical butter cookie, which I like.
Cut-Out Cookies
Yields 5 1/2 dozen 2″ rounds
3 1/2 c. flour
2 t. baking powder
1/4 t. salt
1-14oz can sweetened condensed milk
3/4 c. softened butter or margarine
2 eggs
1 T. vanilla
Beat eggs, butter, vanilla, and milk until smooth. Add dry ingredients and beat to combine. Chill dough 2 hours in fridge.
Preheat oven to 350F. Roll out dough on floured surface to 1/8″ thickness and cut out as desired. Bake 7-9 minutes on ungreased cookie sheet.
