This weekend, as autumn tiptoes nearer, take advantage of the wealth of apples to be harvested. Fill your home with the warm, comfy aroma of apples & maple in this Maple Apple Cobbler Cake which is sure to be a hit.
This cake is not only full of hearty toasted walnuts, juicy apples, and spicy cinnamon, but also boasts the “lowfat/low sugar” titles. It is gently sweetened with dark brown cane sugar, tapa dulce, as we call it here in Costa Rica, and literally so chock full of mix-ins that the cake takes on the appearance of cobbler. Maple Apple Cobbler Cake is the perfect addition to an afternoon tea or coffee date.
Maple Apple Cobbler Cake
2 eggs, beaten
1 3/4 c. all purpose flour
1 c. whole wheat flour
1 1/2 t. cinnamon
1/4 t. ginger
3/4 t. baking soda
1/4 t. salt
2 1/2 c. chopped apples
1 t. lemon juice
1 c. brown sugar
3/4 c. oil
1/2 c. water
1 t. vanilla extract
1 t. maple flavoring
1 c. toasted chopped walnuts
1/2 c. dried cranberries
Preheat oven to 350F. Grease and flour a 10” bundt pan or 9×13” baking dish. Combine all dry ingredients (except sugar) in a medium bowl and whisk together. Mix apple pieces with lemon juice in a small bowl to prevent browning. In a large bowl whisk together all wet ingredients and sugar. Slowly blend in dry ingredients, being cautious not to over mix. Stir in nuts, apples, and cranberries. Bake 22-25 minutes or until a toothpick inserted removes clean. Serve sprinkled with powdered sugar, if desired.
