Blueberry Cheesecake Crêpes

Blueberry Cheesecake Crepes- tangy cream cheese filling and sweet, juicy blueberries packaged into delicate crepes.   #crepes #breakfast | Jellibean Journals I’ve been withholding something from you that it’s time to disclose: blueberry cheesecake crêpes are insanely delish and really must debut at your breakfast table stat.

blueberry cheesecake crepesCrêpes might sound ooh la la impressive, especially if you serve them of gorgeous plates, but don’t be fooled. Crêpes are a snap to make. Add a simple topping of maple cream cheese and fresh juicy blueberries and these easy crêpes really come to life.

Blueberry Cheesecake Crepes

Serves: 10-12 crêpes
Ingredients
  • Basic crêpe recipe from Mélanger.com
  • 1 cup (150g/5oz) plain flour
  • ¼ teaspoon salt
  • 1 egg, lightly beaten
  • 300ml milk
  • Maple Cream Cheese
  • ½ cup cream cheese, at room temp., if possible
  • 2T. maple syrup, to taste
  • 1-2 cups blueberries
Instructions
  1. Crêpes
  2. Mix flour and salt together. Make a hollow in the center and stir in egg. Gradually add the milk. Mix completely and refrigerate for at least 1 hour (preferably).
  3. Re-mix the batter. Fill a ¼ cup half way, or measure out 2 tablespoons of mixture, and set aside.
  4. For each crêpe, melt about a teaspoon of butter/oil in a pan on medium heat. When it begins to smoke, lift the pan from the heat and tip to coat the entire bottom of the skillet. Pour in premeasured batter and quickly swirl by tilting the pan to distribute the batter evenly across the bottom. Return the pan to the heat and cook.
  5. After a few minutes, you will start to see some bubble blister appear on the surface. The underside of the crêpe at this stage is starting to brown. Flip and cook about 30 seconds on the other side. Remove to a plate and continue with remaining batter.
  6. Maple Cream Cheese
  7. Stir together maple syrup and cream cheese until combined.
  8. Serve
  9. Dallop maple cream cheese over warm crêpes and top generously with blueberries.

    Yum! I love love love crepes…and blueberries. (Salivating) My kids on the other hand didn’t seem to care for them last time I made them, so I ate’em all up myself! Thanks for sharing this wonderful blueberry version.

      You should definitely make them for yourself anyway. If your kids like bananas, cook some banana rounds in brown sugar and butter and fill their crepes with that & you’ll all be happy. Top with ice cream as a dessert, and what kid could resist? Thanks for visiting today!
