Brown Butter Butterscotch Blondies

brown butter butterscotch blondiesMy granny sent me a bag of butterscotch baking morsels for Christmas. You know grannies, always looking out for our best, international shipping and all. Gotta love grannies, right? I digress. There’s something about butterscotch chips that scream “cookie bars!” to me. Those well-travelled chips dived right into a thick brown butter batter and baked into the most lush brown butter butterscotch blondies I’ve ever tasted. No other words are necessary than to say that you’ve never tasted blondies until you’ve tried these!

Brown Butter Butterscotch Blondies

Ingredients

  • 2 c. whole-wheat or AP flour
  • 2 c. light brown sugar
  • 2 t. baking powder
  • 1/2 t. salt
  • 10 T. (1 stick + 2T.) butter
  • 3 eggs
  • 1 c. butterscotch baking chips

Instructions

Preheat oven to 350F.

Line a 9x13" baking dish with parchment paper.

In a small saucepan over medium low heat, brown the butter, stirring occassionally. Set aside to cool.

Whisk together all dry ingredients in a medium bowl.

In a small bowl, whisk together eggs and butter. Pour into dry ingredients and stir to combine.

Stir in baking chips and spoon into baking dish.

Bake 30 minutes or until a toothpick inserted removes clean. Cool before cutting.

      Thanks. Meredith. They were pretty tasty. Since I only used half the bag of chips, I’ve still got treasure! We’ll see where those extra butterscotch morsels end up.
