This month, IHOP sponsored a Pancake Olympics benefiting an animal rescue organization. Their festivities included the pancake flip, pancake toss, pancake decorating, and the event I want to sign up for ASAP: MUSICAL PANCAKES! Forget the eating contests, the tossing, flipping, and whatever else entrants did to my beloved flapjacks. The idea of plopping down on soft, warm, delicious pancakes just sounds downright hilarious. I’d love to know whether these hotcakes were topped with the fixin’s, because my, oh my, what fun that would be!
The savory scent of my simmering Crockpot of marinara made me yearn for an afternoon snack today. Browsing my favorite blogs, I found a simple pancake recipe. Add in a few of my own ingredients, top with dulce de leche and strawberries & voila, a delicious treat. Since I know Husband will give me a hard time if I don’t share, he has 2 waiting for his breakfast tomorrow a.m.
Couldn’t be Simpler Snacking Pancakes
Yields 4-6″cakes
1 c. AP flour
1 c. buttermilk or 1 c. milk + 1 T. white vinegar
1 egg, lightly beaten
1 t. baking soda
1/2 t. salt
1/4 t. fun spices of choice (I used pumpkin pie spice)
1/4 t. vanilla
1 t. sugar, honey, Splenda or other sweetener
tasty toppings of choice
You know the drill. Combine dry, combine wet, add wet to dry. Stir just enough to mix, but leave the little lumps alone. They are our friends. Medium heat (nonstick or greased) griddle, brown, flip, brown, decorate, dig in!
