MMM: Fruit Juice and Yogurt Gelatin

Here in Costa Rica, gelatin is as prevalent as the rice and beans that show up on breakfast, lunch, and dinner plates. You can even find it paired with ice cream, which in my opinion is blasphemy to the goodness of ice cream. For my daughter’s first birthday,  I served this fruit juice and yogurt gelatin and it was a hit! What a great way to make “dessert” out of healthy ingredients.

Fruit Juice and Yogurt Gelatin

Ingredients
  • 1 pkg. unflavored gelatin
  • grape juice
  • plain yogurt
  • water
Instructions
  1. Grape Juice Gelatin Follow instructions on the gelatin package to prepare, using grape juice instead of water. If you'd like your gelatin a little less tangy, sub in a little water for some of the juice to suit your tastes. Refrigerate and allow to set up.
  2. Yogurt Gelatin Follow instructions on gelatin package, substituting grape juice for hot water. Use plain yogurt in place of cold water and stir to combine. Chill per package directions.

    yuuuum!! I really love the ones that instead of using yogurt, uses condense milk. Makes me wish I had some unflavored gelatin in my pantry right now!

    Oh this looks good! I’ve never been a jello fan either but I married into a Japanese family and they are big on gelatin in everything too, so I’ve gotten used to the coconut, red bean, & coffee gelatin!

    Jelli, this is so perfect! I have to take the snack in a couple week for my son’s preschool, and the letter for the week is “J”. The only idea I could come up with was jello. Now I have healthy recipe for it. Thanks so much 🙂
