Cinnamon Roll Muffins

November 30, 2009 By Jelli 12 Comments

Joy the Baker has a knack for taking our favorite treats and making them quick-fix favorites. A few weeks ago I baked scrumptious shortcut cinnamon roll muffins that she´d posted (originally from BakingBites). The clever ingenuity behind these muffins is that they are practically identical to their spiral twice-risen yeasty cousin, but with much less hassle and  tummy ready in less than an hour.

While unquestionably delightful, I had a difficult time convincing myself that they were on par with my favorite cinnamon rolls. For a muffin, these babies rock, but placing them on the same pedestal as the gooey, tender, buttery cinnamon roll slathered in thick coat of cream cheese frosting is a little outrageous. If you´re hoping to please overnight guests or serve an afternoon tea with friends, these are perfect, but for the MUST-have-cinnamon-roll-NOW cravings, I hate to tell you, but your only options are waiting  two hours for yeasty rolls to ready themselves for baking, or karting yourself straight on over to the mall for a Cinnabon.

* When filling muffin cups, don’t fill more than 1/2 full or you’ll have sticky topping oozing onto your muffin tin and perhaps melting into your oven. Caution!

They look delicious to me! Although I’d leave off the pecans as I’m allergic to nuts and all. But what a great idea for muffins! Yum!!

I made these last night and was a bit disappointed Joy didn’t mention to only fill the cups half way and so most of all my yummy “filling” melted off the top and on to my cookie sheet. 🙁 I did make two little 4 inch pans and they worked much better. The twins ate those two and LOVED ’em so I guess I’ll be making these again. I hope my next batch comes out as yummy LOOKING as yours did!

Ingrid, I’m so sorry! I forgot to warn about that. It happened to me too. What I did was to scrape the melty topping off the tin and back onto the muffins mid-bake which is difficult to do reaching into the oven. Hoping we can save others from this disaster. I put a note on the post. Thanks for letting me know.

Jelli I so made these the other night…they went over well. I took your advice and others too about filling only 1/2 way and letting the dough rise for 1 hr…perfect 🙂
