Caramel Apple Overnight Oats

Overnight oats is one of my top choices for getting breakfast on the table in a flash. My family practically lives off overnight oats variations, like this fall favorite, caramel apple overnight oats, especially nowadays with a newborn in the mix. One of my favorite breakfast ideas for kids, the prep’s zippy! Caramel apple overnight oats are a great way to get some extra fiber and fruit into your family’s diet starting first thing in the morning. Crisp, tart apples are combined with creamy caramel flavor, tangy cinnamon, crunchy walnuts, and of course, milk!

I prefer making overnight oats recipes with rolled oats, but you can  use quick cooking oats too. They work just fine, but aren’t quite as chewy. I just love how filling oatmeal is for breakfast. I feel like I can make it all the way to lunch without a snack most mornings, though admittedly, I do generally nosh on something mid-morning, like a healthy smoothie.

Now, there are a couple of routes you could go with this recipe. You could make apple pie filling or pick up a can at the supermarket and layer it into the oats or you can simply dice fresh apples and toss them in. Personally, I like to keep things simple and lower in sugar, so I toss in fresh apples.

This overnight oats recipe uses an ingredient that many people have on hand, caramel coffee creamer, as the caramel flavoring. You could certainly opt to make your own caramel sauce or use jarred.
