Five Minute Brownies

Five Minute Brownies: lush, decadent and FAST! | Jellibean JournalsI like my chocolate dark and strong. I’ll spare you the “like my man” line. Brownies are the perfect way to satisfy a chocolate craving midweek, especially with five minute brownies. This recipe boasts a whopping 1 to 1 ratio of cocoa powder to flour, which makes a mighty rich, mighty fine, mighty luscious chocolate indulgence.

While I’m a sucker for  big-batch brownies, these dark chocolatey bites are perfect for a quick snack, impromptu luncheon, or tea time. The taste, texture, and time commitment are spot-on. Who could resist five minute brownies?

Five-Minute Brownies

Serves: 1- 8x8" pan of brownies
Ingredients
  • ½ c. butter
  • ¾ c. cocoa
  • ¾ c. all-purpose flour
  • 3 eggs
  • 1 c. + 1 T. sugar
  • 1 t. vanilla
  • Pinch coffee grounds & salt
Instructions
  1. Melt butter with cocoa in microwave for 45 seconds. Stir together and add sugar. Cool slightly and whisk in wet ingredients followed by flour, coffee, and salt. Pour into greased 8x8” baking dish and microwave on high for 5 minutes. Cool 10 minutes before cutting.

Notes: For easier removal, use parchment paper instead of greasing the dish. For best results, always slice brownies with a plastic knife. This recipe has also been tested using a 9×13” dish with great results (just test to be sure your microwave can rotate with a dish so large.)
