Fork it in Friday Faves…on Thursday and in pictures!

This week has been quite hectic at our house, as Husband has arrived home past midnight on more than one occasion due to a stressful overload of work at the office. Therefore, he has ordered out most nights this week, meaning my actual meals weren´t spectacularly stunning (with the exception of a penne with scallops and slow-cooker marinara that I prepped for him to take to lunch today). This week’s Friday favorite I owe to my new grandparents, Husband’s finest set of jolly cheery abuelitos with whom we enjoy weeknights of dinner and card games. We usually play to see who makes dinner the next week, but this time we lucked out when they invited us over. Best part is, that Abuelito knows that one of my favorite dishes is ceviche, so that’s what he made. Thanks Abuelito! You’re the best!

Since they are the loveliest grandparents a couple could ask for, they spoiled us a bit (as usual), meaning we not only had ceviche, but also enjoyed  a few other delicias. I’ll walk you through it.

Firm whitefish cold-cooked in lemon juice and combined with celery, sweet red pepper, onion, cilantro, and salt. Abuelito isn’t a recipe kind of guy, so here’s one to try. His is quite similar, but he has mentioned using lemon-lime soda instead of Ginger ale, and omitting o.j.

Husband’s 2nd plate featured a corn tortilla topped with fresh tomato and salchichon, an unspiced sausage prototype that only makes it down my throat when my gag reflex is forced to submit.
Husband’s goofy tableside (and every other side) manner. I heart this man.
Gallo Pinto is a typical Costa Rican breakfast dish made up of a base of rice & beans (day old is best) sauteed with sweet red pepper, onion, garlic (optional), salt, cilantro, and lots of salsa Lizano. Worsterchire could come close, but look for Lizano in intl. markets or better yet, come visit Costa Rica! Pinto without natilla just isn’t pinto, according to Husband, so be sure to dallop a heaping spoonful of this sour cream cousin atop your hearty dish. Here’s a pretty authentic recipe.
Pretty self explanatory: take cas toss whole into blender with water and sugar, puree and strain.

I seriously hope you consider making one (or more) of these recipes sometime soon. As families continue budget friendly mealtime planning, I encourage you to add gallo pinto to the repertoire, as it is one of the cheapest yet heartiest meals around.

    Mmm, that Gallo Pinto sounds good. I live in Guatemala and we have several very similar dishes. I LOVE beans with natilla!
