This week has been quite hectic at our house, as Husband has arrived home past midnight on more than one occasion due to a stressful overload of work at the office. Therefore, he has ordered out most nights this week, meaning my actual meals weren´t spectacularly stunning (with the exception of a penne with scallops and slow-cooker marinara that I prepped for him to take to lunch today). This week’s Friday favorite I owe to my new grandparents, Husband’s finest set of jolly cheery abuelitos with whom we enjoy weeknights of dinner and card games. We usually play to see who makes dinner the next week, but this time we lucked out when they invited us over. Best part is, that Abuelito knows that one of my favorite dishes is ceviche, so that’s what he made. Thanks Abuelito! You’re the best!
Since they are the loveliest grandparents a couple could ask for, they spoiled us a bit (as usual), meaning we not only had ceviche, but also enjoyed a few other delicias. I’ll walk you through it.
I seriously hope you consider making one (or more) of these recipes sometime soon. As families continue budget friendly mealtime planning, I encourage you to add gallo pinto to the repertoire, as it is one of the cheapest yet heartiest meals around.
