Today’s recipe is so easy that you could probably let your 5 yr. old make it without much supervision. Yep, that simple. No time, you say? Oh yes you have. Plenty. This zippy cheesy gelatin dessert is quick and delicious, like a mousse-meets-cheesecake love story. Enjoy.

Woolworth’s Cheesecake *yes, from that store
3 oz. flavored gelatin (traditionally lemon, but I make all variations)
1 c. boiling water
8 oz. cream cheese
1 c. sugar
5 T. lemon juice or water
1-12oz. can chilled evaporated milk
2 c. crushed grahams or vanilla wafers
2T. sugar
2 T. melted butter or margarine

Dissolve gelatin in hot water and allow to cool to consistency of egg whites. Meanwhile, crush 2 c. of graham crackers or vanilla wafers and pour into 9×13″ baking dish. Add melted butter and sugar and mix. Press with greased fingers all along bottom of dish.

When gelatin is almost ready, beat cheese, sugar, and lemon juice until fluffy and smooth. Add gelatin. In separate bowl whip evaporated milk until very fluffy. Pour into gelatin mixture and beat 1 minute. Pour over graham crust. Chill 1 hr, cut and serve.
