Orange Creamsicle Cupcakes

Since it’s harder to keep sweets out of the hands of little ones who see their older siblings munching away, my son knows cupcakes all too well. These orange cream cupcakes are buttery, tender, and bursting with fresh orange flavor. Adapted from a Martha Stewart recipe, they’re sweet and simple. Gotta love that.orange creamsicle cupcake recipe | jellibeanjournals.com

The star of the party is the fluffy orange marshmallow frosting. Heads will turn and grins widen as your friends nibble on this unconventional frosting. It’s literally like eating a pillowy orange marshmallow on top of your cupcake. YUM!

The orange marshmallow frosting is zippy to make. We’ll dissolve orange gelatin over low heat with egg whites and sugar. Next, we scrape that mixture right into the mixer and whip until it’s light, fluffy, and holds stiff peaks. It’s like making meringue, but not at all high-maintenance!orange creamsicle cupcakes
