Orange creamsicle cupcakes are a fresh take on the ice cream truck popsicle favorite that make kids of all ages sprint for the dessert table. My kids are cupcake fiends. When my oldest had her second birthday, she was first introduced to the beauty of cupcakes. Since it’s harder to keep sweets out of the hands of little ones who see their older siblings munching away, my son knows cupcakes all too well. These orange creamsicle cupcakes were his second birthday pick last month. Okay, so I picked them, but he was a mega supporter of the cause.I’m still reeling over the fact that he’s two. TWO. Time really does fly when your kids are little.
Time and cupcake crumbs… yep, they both fly when you’re two.
These orange cream cupcakes are buttery, tender, and bursting with fresh orange flavor. Adapted from a Martha Stewart recipe, they’re sweet and simple. Gotta love that.
The star of the party is the fluffy orange marshmallow frosting. Heads will turn and grins widen as your friends nibble on this unconventional frosting. It’s literally like eating a pillowy orange marshmallow on top of your cupcake. YUM!
The orange marshmallow frosting is zippy to make. We’ll dissolve orange gelatin over low heat with egg whites and sugar. Next, we scrape that mixture right into the mixer and whip until it’s light, fluffy, and holds stiff peaks. It’s like making meringue, but not at all high-maintenance!
